Strawberry-Lemon Blondies



Bake day number 1. (Not really, but the first day of blog posting about my daily baking).

In the oven this evening was a pan of Strawberry-Lemon Blondies, from the book Duff Bakes: Think and Bake Like a Pro at Home, by Duff Goldman. This recipe came together super quickly and easily (thank you Stand Mixer!), but my cantankerous oven foiled me yet again. My electric oven bakes reeeeeeally slow, and this was especially obvious with these blondies which called for a slow bake at a relatively low temp. For me that meant perfectly cooked edges at the end of the recipe's prescribed bake time, with a blondie-soup in the middle. Ugh.

So back into the oven it went, with aluminum foil wrapped around the edges to help stave off over-browning. The final result was definitely a little more browned than the original recipe could possibly have had in mind ... but they smelt fantastic and tasted divine. The lovely combination of the strawberry swirl topping and the lemon rich blondie were like a little reminder of summer days.
